Roasted Garlic Spread:  In a small ovenproof dish, coat 6 small garlic cloves (do not peel garlic) with 2 Teaspoon olive oil.   Roast in 400 degree oven for 15 minutes.  Remove and cool.  Squeeze out the garlic from its shell into a medium bowl.  Mash with a fork and stir in 3 Tablespoons Sour Cream and 2 Tablespoons of mayonnaise.  Season with 1/2 Teaspoon salt and a pinch or two of paprika

Smoked Salmon, Bell Peppers, Creme Fraiche and Raspberry Balsamic Vinegar:  ​On each sliced toasted bread rounds, place a small slice of smoked Irish Salmon, top with a piece of roasted bell pepper, about 1 Tablespoon of creme fraiche and a drizzle of Balsamic Vinegar infused with Raspberry (for 10 sliced rounds use 1/4 lb of thinly sliced smoked salmon, about 6 oz of creme fraiche and about  10 oz roasted red/yellow bell peppers and 1/4 cup balsamic vinegar)

Mushroom Duxelle with Sun-Dried Tomatoes and Herbs:  In a medium saute pan, cook 2 Cups finely chopped mushrooms with 1/4 Cup finely chopped onion in 1 Tablespoon olive oil over medium heat for about 5 minutes, then add 1 chopped garlic clove, 1 Tablespoon chopped fresh parsley, 1/4 Teaspoon dried thyme, 1/8 Teaspoon dried oregano and 1/4 Teaspoon salt.  Cook for another 2 minutes.  Remove from the heat and add 2 Tablespoons finely chopped Sun-Dried Tomatoes and stir to combine.  Top sliced toasted bread rounds with about 1-2 Tablespoons of the Mushroom Duxelle spread.
