It's Everything Cauliflower Season

Enjoy this Creamy Cauliflower Hummus!


Ingredients

1 medium cauliflower head, cut into florets

1 medium garlic clove, not peeled

1 medium onion, sliced thin

1 teaspoon ground cumin

1/4 cup extra virgin olive oil, divided use

1 teaspoon kosher salt

1/2 teaspoon fresh ground pepper

1/2 cup Greek style yogurt

1 teaspoon lemon zest

3 tablespoons fresh squeezed lemon juice

Directions
Preheat oven to 425 degrees F

1. Cut out the core of the cauliflower and remove the leaves.  Cut the cauliflower into 1-2" size florets.  Slice the onion into vertical slices.  Place the cauliflower pieces, the onion slices and the garlic in a plastic bag.  Add about half the olive oil.  Close the bag and rub the bag to coat the cauliflower mixture in the bag.  
2. Empty the bag of cauliflower mixture onto a parchment covered baking sheet and spread out the mixture so that it is in 1 layer.  Lightly salt and pepper the mixture and place in the preheated oven for 20 minutes (until the cauliflower is starting to turn slightly golden).  Remove from the oven and let it cool for about 5 minutes
3. Zest the lemon.  Juice the lemon into a small cup.  Measure the yogurt into another small cup.  
4. Combine the roasted cauliflower, onions and peeled garlic clove with the cumin and lemon zest and lemon juice into the food processor bowl fitted with a steel blade.  Process until almost smooth.  Add the remaining portion of the olive oil and the yogurt. Process again until smooth.  Check for seasoning and add salt and pepper.  
5. Transfer to a medium size bowl.  Sprinkle with parlsey and a drizzle of olive oil.  Serve with Pita Chips and/or Endive leave.
